Cooking Instructions
Follow our step-by-step guide on how to make Air Fryer Shortbread Cookie Fries with Strawberry Ketchup.
Step 1
In a medium bowl, combine the flour and sugar. Cut in the butter using a pastry blender until the mixture resembles fine crumbs and begins to cling together.
Step 2
Form the mixture into a ball and knead it gently until smooth.
Step 3
Preheat your air fryer to 350°F (190°C).
Step 4
On a lightly floured surface, roll the dough to a thickness of 1/4 inch. Cut the dough into 'fries' that are about 1/2 inch wide and 3 to 4 inches long. Sprinkle with additional sugar if desired.
Step 5
Arrange the cookie fries in a single layer in the air fryer basket. Cook for 3 to 4 minutes, or until they are lightly browned. Allow them to cool in the basket until firm enough to transfer to a wire rack to cool completely. Repeat with any remaining dough.
Step 6
To prepare the strawberry 'ketchup', press the jam through a fine mesh sieve using the back of a spoon. Stir in the ground chipotle pepper if using.
Step 7
Whip the lemon curd to achieve a dippable consistency for the 'mustard'.
Step 8
Serve the cookie fries with the strawberry ketchup and lemon curd mustard for dipping.
