Step 1
In a small saucepan, combine 1/2 cup soy sauce, brown sugar, and mirin. Bring to a simmer over medium heat and cook until the sauce reduces by half, about 5 to 10 minutes. Set aside to cool and thicken.
Step 2
While the sauce cools, soak the raw almonds in water for at least 10 minutes, then drain. Cut each almond into thirds or smaller pieces if desired.
Step 3
Press the tofu block between paper towels to remove excess water. Firmly squeeze the tofu and set it aside on a cutting board.
Step 4
Arrange the asparagus spears in a single layer on the air fryer crisping tray. Lightly spritz with olive oil cooking spray.

Preheat the air fryer to 375°F (190°C) and cook the asparagus for 10 minutes. Shake the basket halfway through cooking to ensure even cooking. Once done, transfer the asparagus to a large bowl.
Step 6
In a separate large bowl, mix together olive oil, 1 teaspoon soy sauce, rice vinegar, and garlic powder. Cut the tofu into 1/2- to 1-inch cubes and add them to the bowl, gently mixing to coat the tofu without breaking it. Toss the tofu with nutritional yeast.

Place the seasoned tofu cubes on the air fryer crisping tray and cook at 375°F (190°C) for 10 minutes, shaking the basket halfway through.
Step 8
Combine the cooked tofu and asparagus in a bowl, gently pressing some tofu cubes to create a semi-scrambled texture. Drizzle the sweet soy sauce over the mixture and sprinkle with chopped almonds before serving.
