Cooking Instructions
Follow our step-by-step guide on how to make Almond Flour Chocolate Chip Muffins Delight.
Step 1
Preheat your oven to 425°F (220°C).
Step 2
In a mixing bowl, sift together 3 cups of almond flour, baking powder, salt, and baking soda. Set this dry mixture aside.
Step 3
In another bowl, combine the eggs, sugar, melted butter, Greek yogurt, and vanilla extract. Use an electric mixer to blend until the mixture is smooth and creamy.
Step 4
Gradually add the dry flour mixture to the wet ingredients, mixing until just combined. Be careful not to overmix the batter.
Step 5
In a small bowl, toss 3/4 cup of the chocolate chips with 1 tablespoon of almond flour to lightly coat them. Gently fold these coated chocolate chips into the muffin batter.
Step 6
Distribute the batter evenly among 10 paper-lined muffin cups, filling each cup to the top. Sprinkle the remaining chocolate chips over the tops of the muffins.
Step 7
Bake in the preheated oven for 5 minutes. Then, reduce the temperature to 350°F (175°C) and continue baking for an additional 12 to 15 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
Step 8
Allow the muffins to cool in the pan on a wire rack for at least 5 minutes before serving.
