Cooking Instructions
Follow our step-by-step guide on how to make Apple Cider Muffins with Streusel Topping.
Step 1
Preheat your oven to 400°F (200°C). Grease the bottoms of 12 muffin cups or line them with paper liners.
Step 2
In a medium bowl, whisk together the flour, white sugar, baking powder, cinnamon, nutmeg, and salt until well combined.
Step 3
In another bowl, mix the apple cider, vegetable oil, and egg until blended. Pour the flour mixture into the wet ingredients all at once and stir gently until just moistened; the batter will be lumpy. Fold in the diced apples.
Step 4
For the streusel topping, combine brown sugar, oats, pecans, and flour in a medium bowl. Mix well, then stir in melted butter until the mixture is moistened and clumpy.
Step 5
Spoon the muffin batter into the prepared muffin cups, filling each about two-thirds full. Generously sprinkle the streusel topping over each muffin.
Step 6
Bake in the preheated oven for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool for 1 minute before removing them from the pan. Serve warm.
