Step 1
In the bowl of a stand mixer, combine the active dry yeast and 1/3 cup of almond milk. Let it sit for 5 minutes until frothy.
Step 2
Add the all-purpose flour, mashed avocados, 2 tablespoons of almond milk, sugar, and salt to the yeast mixture. Mix on low speed until combined.

Gradually add the bread flour and mix until well blended. Knead the dough on medium-low speed for 8 to 10 minutes until it becomes smooth and elastic. The dough will be slightly sticky but should not stick to your fingers.

Incorporate the vegan margarine into the dough by kneading on medium-high speed for about 1 minute.

Transfer the dough to a bowl coated with olive oil, cover it with plastic wrap, and place it in a warm area to rise until doubled in size, approximately 1.5 hours.

Once risen, punch down the dough, cover it again, and let it rise for an additional 2 hours.

In a small bowl, mix together the olive oil and a pinch of salt.

Divide the dough into 4 equal portions and shape each into a smooth ball. Spray a 9x5-inch loaf pan with cooking spray and place the dough balls inside. Brush the tops with half of the olive oil mixture, reserving the rest. Cover loosely with oiled plastic wrap and let rise until the dough fills the pan and slightly overflows, about 1 hour.

Preheat your oven to 375°F (190°C).

Brush the remaining olive oil mixture over the top of the loaf.
