Step 1
Preheat your oven to 350°F (175°C). Prepare a muffin pan by spraying 16 cups with nonstick cooking spray and lining them with paper liners.

In a mixing bowl, whisk together the all-purpose flour, cornmeal, ground nutmeg, and ground allspice for about 10 seconds. Set aside 2 tablespoons of this mixture in a separate bowl.

If using, add the chopped walnuts to the reserved flour mixture and toss to coat. Set this aside as well.

In another bowl, combine the buttermilk and baking soda, then stir in the diced avocado until well mixed.

In a large bowl, cream together the unsalted butter and white sugar using an electric mixer on medium speed for 1 to 2 minutes. Reduce the mixer speed to low and add the eggs one at a time, ensuring each is fully incorporated before adding the next. Gradually add the flour and buttermilk mixtures in about four additions each, mixing until just combined. Scrape down the sides of the bowl to ensure no clumps remain, then mix on medium speed for an additional 15 seconds. Gently fold in the walnuts, if using.
