Cooking Instructions
Follow our step-by-step guide on how to make Bacon Leek Tomato Mac and Cheese.
Step 1
Start by filling an 8-quart stockpot with 5 cups of water and bring it to a rolling boil.
Step 2
While the water heats up, grab a large skillet and cook some bacon over medium-high heat.
Step 3
Stir it occasionally until it turns crispy and golden, which should take about 8 to 10 minutes.
Step 4
Once it’s done, let the bacon drain on a plate lined with paper towels to soak up any excess grease.
Step 5
Now, when your water is boiling, it’s time to add the elbow macaroni along with sharp white Cheddar cheese, cream cheese, Parmesan cheese, salt, and black pepper.
Step 6
Cover the pot and let it simmer vigorously for 5 minutes, giving it a stir now and then to keep everything from sticking together.
Step 7
While the macaroni is cooking, let’s prepare the leek.
Step 8
Trim off the dark green tops and toss them aside.
Step 9
Slice the leek in half lengthwise, then cut it crosswise into 1/2-inch pieces.
Step 10
Rinse these slices in a bowl of cold water to wash away any dirt, then drain them well.
Step 11
After the macaroni has simmered for 5 minutes, stir in the drained leek and continue cooking uncovered.
Step 12
Keep stirring occasionally until the macaroni is tender and the sauce has thickened, which should take another 5 minutes.
Step 13
Meanwhile, let’s get the tomatoes ready.
Step 14
Cut them in half lengthwise, remove the cores, and scoop out the seeds.
Step 15
Dice the tomatoes and set aside a quarter cup for garnishing later.
Step 16
Once the macaroni is cooked to perfection, remove the pot from the heat and gently fold in the diced tomatoes and half of the crispy bacon.
Step 17
Now, it’s time to serve! Spoon the creamy macaroni and cheese into a lovely serving bowl, and don’t forget to sprinkle the remaining bacon and reserved diced tomatoes on top for that extra touch.
Step 18
Enjoy your delicious creation right away!.
