Cooking Instructions
Follow our step-by-step guide on how to make Bacon-Wrapped Chicken with Artichokes and Mushrooms.
Step 1
In a large skillet, cook the chopped bacon over medium-high heat, stirring occasionally, until it is evenly browned, about 10 minutes. Once cooked, remove the bacon from the skillet and place it on a paper towel-lined plate to drain excess grease.
Step 2
In a separate skillet, heat the olive oil and butter over medium heat. Once the butter has melted, add the pounded chicken breasts and cook for 4 to 5 minutes on each side, or until they are golden brown. Remove the chicken from the skillet and set it aside on a plate.
Step 3
In the same skillet, add the chopped mushrooms and green onions. Sauté for 6 to 8 minutes, or until the mushrooms are soft. Then, add the chopped artichokes, minced garlic, and dried oregano, and sauté for an additional minute.
Step 4
Stir in the cooked bacon, followed by the white wine and sugar. Bring the mixture to a simmer and let it cook for 3 to 5 minutes, allowing the sauce to reduce slightly.
Step 5
Return the chicken breasts to the skillet, then add the half-and-half. Simmer for 1 minute, allowing the flavors to meld together before serving.
