Step 1
Preheat your oven to 350°F (175°C).
Step 2
Slice half of the jalapeno, half of the red bell pepper, and half of the red onion into rings for topping. Set these aside.

In a food processor, combine the ground chicken and chopped cilantro. Season with adobo seasoning, ground cumin, and Mexican seasoning mix. Add the remaining halves of the jalapeno, bell pepper, and onion, then pulse until well combined.

Shape the mixture into 8 burger patties.

Place the patties on a rimmed baking sheet lined with a drip tray.
