Step 1
Preheat your oven to 375°F (190°C) and position the oven rack in the upper-middle section. Lightly spray a donut pan with cooking spray.
Step 2
In a large mixing bowl, sift together the flour, sugar, cornstarch, baking powder, nutmeg, and salt until well combined.
Step 3
In a separate bowl, whisk together the buttermilk, eggs, baking soda, and vanilla extract until smooth.
Step 4
Pour the melted and slightly cooled shortening into the flour mixture, stirring until fully absorbed. Then, add the buttermilk mixture and mix until just combined. Allow the batter to rest for 10 to 15 minutes.
Step 5
Spoon a scant tablespoon of batter into each well of the prepared donut pan, using the back of a spoon to spread it evenly across the bottom. You may not use all the batter in this batch.
Step 6
Bake the donuts in the preheated oven for 12 to 15 minutes, or until they are golden brown. Once baked, let them cool in the pan for 2 to 3 minutes before transferring them to a wire rack.
Step 7
If desired, place powdered sugar in a small paper bag and toss the warm donuts in it to coat them lightly.
Step 8
Repeat the process by spraying the donut pan again and spooning in the remaining batter. Bake as before, allowing the donuts to cool and coat in powdered sugar.
