Step 1
Preheat your oven to 350°F (175°C). Lightly coat the bottom of a glass baking pan with olive oil.
Step 2
Cut the haddock fillets into 4- to 6-inch pieces and place them in the prepared baking pan. Sprinkle the fish with chili powder and black pepper.
Step 3
Bake the fish in the preheated oven for about 30 minutes, or until it is cooked through and slightly browned.
Step 4
While the fish is baking, warm the flour tortillas in a lightly greased frying pan until they are slightly browned.
Step 5
Once the fish is done, take a tortilla and place one or two pieces of the baked haddock in the center. Add about 2 teaspoons of guacamole and a thin layer of sour cream on top of the fish.
Step 6
Top with shredded lettuce, a generous sprinkle of Cheddar cheese, and finish with pico de gallo. Serve immediately.
