Step 1
Preheat your oven to 350°F (175°C) and lightly spray a 12-cup muffin pan with baking spray.

In a large mixing bowl, sift together the all-purpose flour, white sugar, baking powder, ground cinnamon, pumpkin pie spice, and kosher salt until well combined.

In a separate bowl, whisk together the applesauce, apple cider, melted butter, beaten egg, and vanilla extract until smooth.
