Step 1
In a large bowl, cream together the softened butter and sugar using an electric mixer until the mixture is light and fluffy.

Add the egg, vanilla extract, and almond extract, and mix until well combined.

Gradually add the flour, baking soda, and salt, mixing until the dough is fully incorporated.

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for about 2 hours, or until it is firm enough to roll out.

While the dough is chilling, place the walnuts in a food processor and pulse until finely chopped.
