Cooking Instructions
Follow our step-by-step guide on how to make Banana Almond Streusel Cake.
Step 1
Preheat your oven to 350ยฐF (175ยฐC). Grease and flour a fluted tube pan (like a Bundt pan) generously.
Step 2
In a heavy skillet over medium heat, toast the whole almonds, stirring constantly until they are browned, about 3 to 5 minutes. Remove from heat and let them cool for about 5 minutes before chopping them into coarse pieces.
Step 3
In a mixing bowl, combine the softened butter, brown sugar, all-purpose flour, white sugar, and ground cinnamon. Use a pastry blender to mix until crumbly. Gently fold in the chopped almonds and set the streusel mixture aside.
Step 4
In another bowl, whisk together the flour, baking soda, and salt. Set this mixture aside as well.
Step 5
Using an electric mixer, beat the softened butter until fluffy. Gradually add the sugar and continue to whip until light and fluffy. Mix in the vanilla extract, then add the eggs one at a time, beating well after each addition. Stir in the mashed bananas on low speed until just combined.
Step 6
Alternately add the flour mixture and yogurt to the banana batter, mixing until just combined. Do not overmix.
Step 7
Pour 1/4 cup of the batter into the prepared Bundt pan. Layer half of the streusel mixture on top. Add another 1/4 cup of batter, followed by the remaining streusel, and then top with the remaining batter. The pan will be quite full, but it should not overflow during baking.
Step 8
Bake in the preheated oven for 65 to 75 minutes, or until a wooden skewer inserted into the center comes out clean.
Step 9
Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, invert the pan onto a wire rack to remove the cake.
Step 10
While the cake is cooling, prepare the icing by mixing confectioners' sugar, milk, vanilla extract, and a pinch of salt until smooth. Poke the top and sides of the warm cake gently with a fork and drizzle the icing over it. Serve warm or allow to cool completely before slicing.
