Step 1
Preheat your oven to 350°F (175°C). Lightly spray a 12-cup muffin tin with cooking spray and set it aside.

In a medium bowl, whisk together the all-purpose flour, brown rice flour, baking powder, baking soda, and salt until well combined.

In a stand mixer bowl, combine the sugar, softened butter, and eggs. Beat on medium speed until the mixture is smooth and creamy. Then, add the mashed bananas, sour cream, and vanilla extract, mixing until fully incorporated.

Gradually add the flour mixture to the wet ingredients in three additions, mixing until just combined. Gently fold in the chocolate chips and sweetened coconut until evenly distributed; the batter will be thick.

Spoon the batter into the prepared muffin cups, filling each about three-quarters full.
