Cooking Instructions
Follow our step-by-step guide on how to make Banana Cupcakes with Peanut Butter Icing.
Step 1
Preheat your oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
Step 2
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, mash the ripe bananas until smooth, then mix in the sour cream and vanilla extract.
Step 3
In a large mixing bowl, cream together the sugar and butter using an electric mixer until light and fluffy, about 3 minutes. Add the egg and egg yolk, mixing until well combined.
Step 4
Gradually add the flour mixture in two batches, alternating with the banana mixture. Mix briefly after each addition until just combined.
Step 5
Scoop the batter into the prepared muffin cups, filling each about 3/4 full.
Step 6
Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely, about 20 minutes.
Step 7
For the frosting, sift powdered sugar into a large bowl. Add cream cheese, butter, and peanut butter, then beat with an electric mixer until smooth. Spread or pipe the frosting onto the cooled cupcakes.
