Step 1
Preheat your oven to 350°F (175°C) and line a muffin tin with 12 paper liners.
Step 2
In a mixing bowl, combine the flour, cinnamon, baking soda, nutmeg, and salt.

In a large bowl, cream together the sugar and shortening until light and fluffy. Mix in the mashed bananas, buttermilk, egg, and vanilla extract until well combined.

Gradually add the flour mixture to the wet ingredients, stirring until just combined. Fill each muffin cup about 2/3 full with the batter.

Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool completely on a wire rack.

For the frosting, cream butter in a stand mixer. Gradually add confectioners' sugar, one cup at a time, mixing until creamy. Add milk to achieve a smooth consistency, then mix in vanilla extract.

Reserve 1/4 cup of frosting in a separate bowl. Divide the remaining frosting into two equal portions. Mix cocoa into one portion and jam into the other until well blended.

To make the ganache, heat cream in a microwave-safe container for 30 seconds. Stir in chocolate, butter, and instant coffee granules until smooth. Let it sit until thickened, about 15 to 20 minutes.

Once the cupcakes are cool, pipe a ring of chocolate buttercream around the edge of each cupcake. Fill the center with a dollop of strawberry buttercream. Top with a banana chip and drizzle with ganache.
