Step 1
Start by preheating your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing them, dusting with flour, and lining the bottoms with waxed paper to ensure easy removal later.

In a mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, baking soda, and salt until well combined. In a separate small bowl, stir together the buttermilk and vanilla extract, setting it aside for later.

In a large mixing bowl, beat the sugar and butter together using an electric mixer on medium speed until the mixture becomes light yellow and fluffy. Remember to scrape down the sides of the bowl often to ensure everything is well mixed. Once fluffy, add in the whole egg and egg whites, beating until fully incorporated.
