Cooking Instructions
Follow our step-by-step guide on how to make Blueberry Banana Coffee Cake Delight.
Step 1
Preheat your oven to 400°F (200°C) and lightly spray a 9x13-inch baking pan with vegetable oil cooking spray.
Step 2
In a large mixing bowl, combine the fresh blueberries, mashed bananas, eggs, flax seed meal, and wheat germ. Use a wire whisk to mix until well combined.
Step 3
Add the all-purpose flour, rolled oats, whole milk, white sugar, vegetable oil, vanilla extract, baking powder, baking soda, and salt to the bowl. Gently mix by hand for about 2 minutes until everything is thoroughly combined.
Step 4
In a separate medium bowl, prepare the topping by mixing together brown sugar, chopped pecans, flour, and cinnamon. Use a fork to combine, then add melted butter and stir until well mixed.
Step 5
Pour two-thirds of the cake batter into the prepared baking pan and sprinkle half of the topping mixture over it. Carefully ladle the remaining batter on top, then sprinkle with the rest of the topping.
Step 6
Bake in the preheated oven for 10 minutes. After that, reduce the temperature to 350°F (175°C) and continue baking for an additional 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
Step 7
Once baked, remove the cake from the oven and let it cool for about 15 minutes.
Step 8
While the cake is cooling, prepare the glaze by whisking together confectioners' sugar and milk in a bowl until you reach your desired consistency. Add more milk if necessary.
Step 9
Drizzle the glaze over the warm cake and serve immediately.
