Step 1
In a saucepan, combine the blueberries, water, sugar, and grated ginger. Bring the mixture to a boil over medium-high heat.
Step 2
Once boiling, reduce the heat to a simmer and cook for 5 minutes, occasionally mashing the blueberries with a masher to release their juices.

Remove the saucepan from heat and let the mixture cool for about 10 minutes.

Strain the mixture through a fine mesh sieve or food mill to separate the skins from the syrup. Set aside 1/4 cup of the syrup for later use and store the remaining syrup in the refrigerator for up to a week.
Step 5
In a glass, add the crushed ice, followed by the reserved blueberry-ginger syrup and orange juice. Stir gently to combine.
Step 6
Top off the drink with club soda and garnish with a slice of orange, if desired.
