Step 1
In a large Dutch oven (7- to 9-quart), combine 4 cups of water, white sugar, and salt. Stir until dissolved.
Step 2
Add the pork shoulder, skin-side up, ensuring the meat is mostly submerged in the brine. If necessary, add more water to cover the pork.
Step 3
Cover the pot and refrigerate for 24 hours to allow the pork to brine.
Step 4
Preheat your oven to 300ยฐF (150ยฐC).
Step 5
After brining, remove the Dutch oven from the refrigerator and drain the brine, discarding it.
Step 6
Cover the pot and place it in the preheated oven. Every 45 minutes, use a baster to drizzle the juices from the bottom of the pot over the roast to keep it moist.
Step 7
Cook for 5 to 7 hours, or until the pork is tender and easily pulls apart.
Step 8
In the last hour of cooking, coat the top of the roast with brown sugar, using the juices to wet the sugar. Continue cooking until the meat is soft and caramelized.
Step 9
Once done, transfer the roast to a cutting board. Remove the shoulder bone and shred the meat with two forks.

Return the shredded pork to the Dutch oven, mixing it with the juices. Serve warm.
