Step 1
Start by beating the eggs and sugar together until the mixture is creamy and smooth. This is where the magic begins! Next, stir in the vegetable oil, apple juice, lemon juice, and vanilla extract, blending everything together beautifully.

In a separate bowl, mix the baking powder into the flour. Gradually add this dry mixture to the egg mixture, stirring until a soft dough forms. Once combined, wrap the dough in plastic wrap and let it chill in the refrigerator for at least 3 hours, or overnight if you can wait!

While the dough is chilling, prepare the brownie filling. Combine the brownie mix with eggs, water, and vegetable oil in a bowl, mixing well until smooth. If you prefer, you can follow the package directions for a low-fat version. Pop the brownie batter in the fridge to chill for the same amount of time as the dough.

After the dough has rested, take it out of the refrigerator and let it sit at room temperature for about 30 minutes. Meanwhile, whisk together an egg and a tablespoon of water to create an egg wash that will help seal your hamentashen.
