Step 1
Start by preparing the mashed potatoes according to the package instructions. Once they're fluffy and ready, stir in the dry Ranch dressing mix for an extra burst of flavor. Set these aside while you work on the rest of the dish.
Step 2
In a Dutch oven, heat the canola oil over medium heat. Toss in the chopped onion, finely chopped celery, and grated carrot. Sauté these veggies until they're tender and fragrant, about 5-7 minutes. Add the minced garlic and cook for an additional 2 minutes, allowing the garlic to release its aroma.

Next, add the shredded rotisserie chicken to the pot, mixing it well with the sautéed vegetables. Then, stir in the drained diced tomatoes, buffalo wing sauce, water, Italian seasoning, salt, and pepper. Step 4
