Step 1
In a food processor, combine the flour, lard, sugar, and salt. Pulse until the mixture resembles flour-covered pea-sized pieces, which should take about 15 quick pulses.
Step 2
Add the buttermilk all at once and process until the dough is just about to come together, but still slightly wet.
Step 3
Lightly flour your work surface and transfer the dough onto it. Turn the dough over to coat it in flour, then gather and fold it over itself a couple of times. Pat the dough into a soft block measuring approximately 4x6 inches.
Step 4
Create an X shape with two long pieces of plastic wrap and lightly dust them with flour. Place the dough in the center and wrap it tightly. Use a rolling pin to smooth the wrapped surface, then flip and repeat the process.
Step 5
Chill the wrapped dough in the refrigerator for at least 4 hours, or preferably overnight. Alternatively, you can place it in a zip-top plastic freezer bag and freeze it for up to 3 months. When ready to use, thaw the dough overnight in the fridge.
