Step 1
In a medium bowl, combine the sliced red cabbage, rice wine vinegar, white sugar, and Spice Islands® salt. Use your hands to massage the cabbage, ensuring it's well mixed. Let it rest for 30 minutes, stirring every 10 minutes to enhance the flavors.
Step 2
In a small bowl, mix together the Mexicorn®, black beans, lime juice, chopped chives, ground cumin, and kosher salt until well combined.
Step 3
Halve the avocados lengthwise, remove the pits, and slice each half into 3 wedges, yielding a total of 24 pieces.
Step 4
To assemble the tacos, place 2 avocado wedges into each taco shell. Top with the Mexicorn-black bean mixture, quick pickled cabbage, a dollop of Greek yogurt, and sprinkle with remaining chives. Serve immediately.
