Step 1
In a Dutch oven or large pot, heat the olive oil over medium heat.
Step 2
Add the chopped carrots and onion to the pot, sautéing for about 10 to 15 minutes until they begin to soften.
Step 3
Gradually pour in enough water to just cover the vegetables, adjusting as necessary.
Step 4
Stir in the star anise, chicken bouillon, and ground coriander, then bring the mixture to a boil.
Step 5
Once boiling, reduce the heat to low and let the soup simmer for approximately 40 minutes, or until the carrots are tender.
Step 6
After simmering, remove the star anise pod from the soup.
Step 7
Using an immersion blender, puree the soup to your desired consistency.

Serve hot, garnished with additional thyme and marjoram.
