Cooking Instructions
Follow our step-by-step guide on how to make Champagne Shrimp Pasta.
Step 1
Start by bringing a generous pot of lightly salted water to a rolling boil.
Step 2
Once boiling, add the angel hair pasta and cook it until it's al dente, which should take about 6 to 8 minutes.
Step 3
After cooking, drain the pasta and set it aside, allowing it to rest while you prepare the sauce.
Step 4
In a large skillet, warm the olive oil over medium-high heat.
Step 5
Toss in the sliced mushrooms and sauté them until they become tender and golden.
Step 6
Once done, remove the mushrooms from the skillet and set them aside.
Step 7
In the same skillet, introduce the shrimp along with champagne and a pinch of salt.
Step 8
Cook over high heat until the mixture reaches a gentle boil, then take the shrimp out of the pan.
Step 9
Next, add minced shallots and diced tomatoes to the champagne, allowing it to boil until the liquid reduces to about half a cup, which should take around 8 minutes.
Step 10
Stir in three-quarters of a cup of heavy cream and let it boil for an additional 1 to 2 minutes until the sauce thickens slightly.
Step 11
Return the sautéed mushrooms and cooked shrimp to the skillet, warming everything through and adjusting the seasoning with salt and pepper to your liking.
Step 12
In a large mixing bowl, combine the hot, cooked pasta with the remaining quarter cup of heavy cream and freshly chopped parsley, tossing well to coat.
Step 13
To serve, plate the pasta and generously spoon the shrimp and sauce over the top, finishing with a sprinkle of freshly grated Parmesan cheese.
Step 14
Enjoy this delightful dish that brings a taste of elegance to your dining table!.
