Step 1
In a medium sauté pan, heat the vegetable oil over medium-high heat. Add the plant-based protein starters and cook until browned and cooked through, about 5 minutes. Remove from the pan and set aside.
Step 2
In the same pan, add the diced onion and cook until translucent, about 5 minutes. Return the cooked protein starters to the pan, add the Worcestershire sauce, and mix well. Set aside.
Step 3
Wipe out the pan and coat it with cooking spray. Heat over medium heat. Place one tortilla in the pan and top half of it with 1/2 cup of shredded cheddar cheese and half of the cooked protein mixture.
Step 4
If desired, add sliced dill pickles on top, followed by another 1/2 cup of cheese. Fold the tortilla in half and cook until the cheese is melted and the quesadilla is golden brown on one side, about 2 minutes. Repeat with the second tortilla and remaining ingredients.
Step 5
Cut the quesadillas into pieces and serve with lettuce, tomatoes, and your favorite dipping sauce.
