Step 1
Preheat your oven to 450ยฐF (230ยฐC) and grease a 9x13-inch baking pan.
Step 2
In a skillet over medium heat, add the diced chicken and cook, stirring occasionally, until browned on all sides, about 6 minutes. Transfer the chicken to a plate.
Step 3
In the same skillet, heat the vegetable oil. Add the diced tomato, bell pepper strips, and onion strips. Cook, stirring frequently, until the vegetables are softened, about 5 to 7 minutes.
Step 4
Return the cooked chicken to the skillet. Add the water and fajita seasoning, mixing well to combine.
Step 5
Layer the bottom of the prepared baking pan with 5 quarters of the corn tortillas. Pour the rinsed pinto beans over the tortillas, then spread half of the chicken mixture on top. Sprinkle with 1 cup of shredded Cheddar cheese.
Step 6
Add another layer of the remaining corn tortillas, followed by the rinsed black beans and the rest of the chicken mixture. Top with the remaining cheese and cover the pan with aluminum foil.

Bake in the preheated oven for 25 to 30 minutes, or until the tortillas are lightly browned and the chicken is cooked through. Remove the foil and let it cool slightly before serving.
