Step 1
Preheat your oven to 350°F (175°C).
Step 2
In a pot over medium-low heat, melt the butter. Add the chopped onion and jalapeno pepper, cooking until the onion becomes translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
Step 3
In a bowl, whisk together the chicken broth and cornstarch until smooth. Pour this mixture into the pot with the onion and jalapeno. Cook while stirring constantly until the broth thickens, about 2 minutes.

Reduce the heat to low and gradually stir in the American cheese, adding 1/4 cup at a time, until fully melted and the sauce is smooth, which should take about 5 to 10 minutes.

Stir in the diced tomatoes, green chile peppers, cumin, and cayenne pepper into the cheese sauce, keeping the pot on low heat. Reserve half of the cheese sauce for later use.

Take a warmed tortilla and sprinkle about 1/4 cup of shredded Cheddar cheese down the center. Roll the tortilla around the cheese and place it seam-side down in a baking dish. Repeat this process with the remaining tortillas and Cheddar cheese.

Cover the baking dish with aluminum foil and bake in the preheated oven for 10 to 12 minutes, or until the cheese is melted. Remove the foil and pour the reserved cheese sauce over the tacos before serving.
