Cooking Instructions
Follow our step-by-step guide on how to make Cherry Almond Snow Cookies.
Step 1
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
Step 2
In a large mixing bowl, combine the softened butter, 1 cup of powdered sugar, and white sugar. Beat with an electric mixer until the mixture is creamy and well combined.
Step 3
Add the finely chopped maraschino cherries, amaretto liqueur, tart cherry juice concentrate, vanilla extract, and almond extract to the butter mixture. Mix until fully incorporated.
Step 4
Gradually add the ground almonds and blend until smooth.
Step 5
In a separate bowl, whisk together the all-purpose flour and salt. Slowly add this dry mixture to the wet ingredients, blending until just combined.
Step 6
Roll the dough into 1 1/2-inch balls and place them on the prepared baking sheets, leaving space between each cookie as they will expand while baking.
Step 7
Bake in the preheated oven for about 20 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheets for 10 minutes.
Step 8
While the cookies are cooling, place the remaining 1 cup of powdered sugar in a bowl. Once cooled, coat each cookie in the powdered sugar until completely covered. Transfer the cookies to a wire rack to cool completely.
