Cooking Instructions
Follow our step-by-step guide on how to make Chicago-Style Macaroni Salad.
Step 1
Start by filling a large pot with lightly salted water and bring it to a rolling boil over high heat. Once the water is bubbling away, toss in the salad macaroni and let it return to a boil. Cook the pasta uncovered, stirring occasionally, until it's tender yet still firm to the bite, which should take about 8 minutes. When done, drain the pasta in a colander and rinse it under cold water until it's chilled. Drain again to get rid of any excess water.
Step 2
In a large salad bowl, combine the cooked macaroni, broccoli florets, diced Cheddar cheese, chopped green bell pepper, dill pickle relish (with juice), chopped dill pickle, chopped celery, sliced black olives, optional sliced green olives, chopped green onion, shredded carrot, and chopped pimento peppers. Gently toss everything together to mix well.
Step 3
In a separate bowl, whisk together the light mayonnaise, prepared yellow mustard, salt, white sugar, and black pepper until you have a smooth dressing. Pour this creamy goodness over the salad mixture and give it a light stir to ensure all the ingredients are well-coated with the dressing.
Step 4
For the best flavor, cover the salad and refrigerate it for at least 4 hours before serving. This allows all the delicious flavors to meld together beautifully.
How to Serve
Serve chilled as a side dish at barbecues, picnics, or family gatherings. It pairs wonderfully with grilled meats and sandwiches.
How to Store
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Give it a good stir before serving again.
