Step 1
Preheat your oven to 250°F (120°C).
Step 2
Place the chicken breast in a resealable plastic bag and pound it flat to about 1/4-inch thickness. Add the cornstarch to the bag and shake to coat the chicken evenly.
Step 3
In a shallow bowl, whisk the egg. Dredge the chicken in the egg, allowing any excess to drip off.

In the bag with the cornstarch, add the bread crumbs, cilantro, chipotle pepper, oregano, cumin, and black pepper. Shake well to combine.

Remove the chicken from the egg and coat it with the seasoned bread crumb mixture, pressing gently to adhere the crumbs.

Place the bolillo rolls in the preheated oven for about 12 minutes, or until warmed through and lightly toasted.

While the rolls are toasting, mix the mayonnaise and hot sauce in a small bowl until well combined.

Heat the sunflower seed oil in a skillet over medium heat. Cook the chicken for about 6 minutes on each side, or until golden brown and cooked through (the internal temperature should reach at least 165°F or 74°C). Cut the chicken in half lengthwise.

To assemble the sandwiches, spread the spicy mayonnaise on both sides of the toasted bolillo rolls. Layer the avocado, tomato, lettuce, pickled carrots, and jalapeños on the bottom half of each roll. Add the chicken on top and place the other half of the roll on top. Serve with extra spicy mayonnaise for dipping.
