Step 1
Preheat your oven to 350ยฐF (175ยฐC).

In a mixing bowl, whisk together the flour, sugar, cocoa powder, and a pinch of salt.

Cut in 1/2 cup plus 3 tablespoons of butter using a pastry cutter or two knives until the mixture resembles coarse meal.

Add the egg and egg yolk to the mixture, mixing until the dough comes together.

On a lightly floured surface, roll out the dough and transfer it to a 9-inch tart pan with a removable bottom.

Bake the tart crust in the preheated oven for about 25 minutes, or until it feels dry to the touch.

While the crust is baking, prepare the pastry cream. In a medium saucepan, bring milk to a simmer.
