Cooking Instructions
Follow our step-by-step guide on how to make Chocolate Peppermint Biscotti.
Step 1
Start by preheating your oven to 350°F (175°C) and lining two baking sheets with parchment paper. This will ensure your biscotti bake evenly and don’t stick.
Step 2
In a large mixing bowl, combine the granulated sugar, softened butter, and unsweetened cocoa powder. Use an electric mixer to beat these ingredients together until the mixture is creamy and smooth, creating a rich chocolate base.
Step 3
Next, add the eggs one at a time, mixing well after each addition. This step is crucial for achieving a light and airy texture in your biscotti. Then, stir in the chocolate liqueur and peppermint extract, infusing your dough with delightful flavors.
Step 4
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually mix this dry mixture into the chocolate-egg mixture until fully incorporated. Finally, gently fold in the mint chocolate chips, ensuring they are evenly distributed throughout the dough.
Step 5
Divide the dough into four equal portions and shape each into a log about 12 inches long. Place the logs on the prepared baking sheets, leaving space between them as they will spread slightly during baking.
Step 6
To create a smooth surface, dip a spatula in water and gently smooth the tops of the logs. This little trick helps achieve a polished look.
Step 7
Bake the biscotti logs in the preheated oven for 30 to 35 minutes, or until they feel firm to the touch. Once baked, allow them to cool completely on wire racks.
Step 8
After cooling, reduce the oven temperature to 300°F (150°C). Cut the biscotti logs into 3/4-inch slices and arrange them back on the baking sheets.
Step 9
Return the sliced biscotti to the oven and bake for an additional 10 minutes on each side, or until they are dry and crisp. Once done, let them cool completely on wire racks again.
Step 10
While the biscotti cool, melt the white candy melts in a microwave-safe bowl. Heat them in the microwave for about 2 1/2 minutes, stirring every 30 seconds until smooth and melted.
Step 11
Once the biscotti are cool, dip each one into the melted white chocolate, allowing any excess to drip off. Finally, sprinkle the tops with crushed peppermint candy canes for a festive touch.
