Cooking Instructions
Follow our step-by-step guide on how to make Chocolate Sables.
Step 1
In a mixing bowl, combine the all-purpose flour, cocoa powder, and sea salt. Set this mixture aside.
Step 2
Using an electric mixer, beat the softened butter and white sugar together until the mixture resembles overwhipped whipped cream. Add the egg yolk and vanilla extract, mixing until well combined.
Step 3
Gradually add the dry ingredients to the butter mixture, using a spatula to fold them in until the dough is evenly moistened.
Step 4
Divide the dough into thirds or quarters. On a large sheet of waxed paper, knead each portion slightly, then shape it into a 1 1/2-inch cylinder or square tube. Wrap the dough tightly in the waxed paper, ensuring the sides are pushed in for an even thickness. Repeat with the remaining dough.
Step 5
Refrigerate the wrapped dough for at least 1 hour, or up to overnight, to firm up.
Step 6
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
Step 7
Slice the chilled dough into 1/4-inch thick cookies using a sharp knife. Arrange the slices on the prepared baking sheets, leaving about 1/2 inch of space between each cookie.
Step 8
Bake in the preheated oven for 20 to 25 minutes, or until the cookies are firm. Allow them to cool completely before enjoying.
