Step 1
Preheat your oven to 400ยฐF (200ยฐC).
Step 2
In a large mixing bowl, combine 1 1/2 cups of white sugar, shortening, and eggs. Use an electric mixer to beat the mixture until it becomes creamy and well combined.

In a separate bowl, sift together the all-purpose flour, cocoa powder, cream of tartar, baking soda, and salt. Gradually fold this dry mixture into the wet mixture until everything is well blended.
Step 4
In a shallow bowl or on a plate, mix together 1/4 cup of white sugar and 2 teaspoons of ground cinnamon.

Roll the cookie dough into 1-inch balls, then coat each ball in the sugar and cinnamon mixture. Place the coated dough balls on an ungreased baking sheet, leaving some space between them.

Bake in the preheated oven for 6 to 8 minutes, or until the tops are soft and golden. Be careful not to overbake. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. The tops will crack as they cool.
