Step 1
Preheat your oven to 350°F (175°C) and line 24 muffin cups with paper liners.
Step 2
In a saucepan over medium-high heat, bring the stout beer and butter to a boil, stirring occasionally for about 5 minutes until the butter melts. Remove from heat and mix in the cocoa powder until smooth.

In a separate bowl, whisk together the flour, sugar, baking soda, and sea salt until well combined.

In a large mixing bowl, use an electric mixer on low speed to blend the eggs and sour cream until smooth. Gradually add the stout mixture, followed by the dry ingredients, mixing until the batter is smooth and well combined.

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Bake in the preheated oven for 17 to 19 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Once baked, remove from the oven and let the cupcakes cool completely, about 30 minutes. Keep the oven on for the bacon.
