Step 1
Place 3/4 cup of butter in the freezer for 1 hour, then cut it into cubes.

Preheat your oven to 425°F (220°C).

In a large bowl, whisk together the flour, 1/3 cup of sugar, baking powder, baking soda, and salt. Cut in the very cold cubed butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.

Make a well in the center of the flour mixture and pour in the buttermilk. Stir gently until the dough is just moistened, then fold in the cinnamon chips.

Turn the dough out onto a lightly floured surface and knead gently 10 to 12 times until it is no longer sticky. Divide the dough in half and shape each portion into a 7-inch circle.

Brush the melted butter over the circles and sprinkle each with 1 tablespoon of sugar. Cut each circle into 6 wedges and separate them on an ungreased baking sheet.
