Step 1
Preheat your oven to 375ยฐF (190ยฐC) and grease two baking trays.

In a large bowl, sift together the flour, ground ginger, and baking soda. Add the butter chunks and stir until they are well coated with the flour. Use your hands to mix the butter and flour until the mixture resembles fine breadcrumbs.
