Cooking Instructions
Follow our step-by-step guide on how to make Classic Linzer Tarts.
Step 1
Start by grabbing a mixing bowl and using an electric mixer to beat together softened butter and white sugar until the mixture becomes light and fluffy—this should take about 2 to 3 minutes.
Step 2
Next, gradually add in half a cup of sifted flour, followed by the ground almonds and a sprinkle of ground cinnamon.
Step 3
Keep mixing and incorporate the remaining flour, half a cup at a time, until your dough is well combined and has a slightly stiff texture.
Step 4
Now, divide the dough into two equal portions and shape each one into a disk.
Step 5
Wrap each disk tightly in plastic wrap and pop them in the refrigerator for an hour to firm up nicely.
Step 6
While the dough is chilling, preheat your oven to 325°F (165°C) and line two baking sheets with parchment paper to prepare for baking.
Step 7
Once the hour is up, take one disk of dough and roll it out on a lightly floured surface to about 1/8 inch thick.
Step 8
Use a 2 1/2-inch round cookie cutter to cut out as many circles as you can—aim for around 12.
Step 9
Place these circles on your prepared baking sheet, leaving about an inch of space between each one, and then return the sheet to the fridge while you work on the second disk.
Step 10
Gather any leftover dough scraps, knead them into a ball, roll them out again to the same thickness, and cut out more circles until you have about 12 additional cookies.
Step 11
For half of these, use a 1/2-inch round cookie cutter to create a little window in the center for the jam filling.
Step 12
Now it’s time to bake! Place the cookies in your preheated oven and let them bake for 10 to 15 minutes, or until they turn a lovely light brown.
Step 13
Once they’re done, take them out and let them cool on a wire rack for about 20 minutes.
Step 14
To bring it all together, spread a thin layer of raspberry jam on the bottom side of each whole cookie, then gently press a cut-out cookie on top to create a delightful sandwich.
Step 15
Repeat this until all your cookies are assembled.
Step 16
For the finishing touch, sift some confectioners' sugar over the top of the assembled cookies and add a small dollop of raspberry jam into the cut-out center of each one.
Step 17
Enjoy the sweet, satisfying process of creating these delicious treats!.
