Step 1
Preheat your oven to 375°F (190°C).
Step 2
In a mixing bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until the crumbs are evenly moistened. Press this mixture firmly into the bottom of a 9-inch springform pan and refrigerate while you prepare the filling.

In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add 1 cup of sugar and continue to beat until well combined. Add the eggs, one at a time, along with the vanilla extract, and beat on high speed until the mixture is creamy and well blended, about 1 minute.

Pour the cream cheese mixture over the chilled graham cracker crust, spreading it evenly.

Place a rimmed baking sheet in the oven and fill it with enough water to cover the bottom. Set the springform pan on top of the baking sheet.

Bake in the preheated oven for about 1 hour, or until the cheesecake is golden brown on top. After 1 hour, increase the oven temperature to 500°F (260°C).

While the cheesecake is baking, prepare the topping by mixing sour cream, 2 tablespoons of sugar, and 1/2 teaspoon of vanilla extract in a bowl. Spread this mixture evenly over the cheesecake just before it finishes baking.

Return the cheesecake to the oven and bake for an additional 5 minutes. Once done, remove the pan from the oven and let it cool on a wire rack for about 1 hour at room temperature.

Refrigerate the cheesecake for at least 4 hours, or until completely chilled, before serving.
