Step 1
Prepare a rimmed baking sheet by lining it with a silicone mat.
Step 2
In a small bowl, combine the baking soda, 1 teaspoon of water, and vanilla extract. Set this mixture aside for later use.
Step 3
In a 3-quart saucepan, mix together the white sugar, 1 cup of water, and light corn syrup. Cook this mixture over medium heat, stirring occasionally, until it reaches 240°F (115°C) on a candy thermometer. This should take about 25 minutes, or you can test by dropping a small amount into cold water to see if it forms a soft ball that flattens when removed.
Step 4
Once the mixture reaches the desired temperature, stir in the coarsely chopped pecans and butter. Continue to heat until the mixture reaches 300°F (149°C), which should take about 13 minutes. Again, you can test by dropping a small amount into cold water to see if it forms hard, brittle threads.
Step 5
Immediately remove the saucepan from heat and stir in the reserved baking soda mixture. The candy will become light and foamy at this stage.
Step 6
Pour the mixture onto the prepared baking sheet and let it cool until hardened, which will take about 1 to 2 hours. Once cooled, break the brittle into pieces and enjoy!
