Cooking Instructions
Follow our step-by-step guide on how to make Classic Quiche Lorraine.
Step 1
Begin by rolling out your pie dough to perfectly fit a 9-inch deep-dish pie plate.
Step 2
Gently press the dough into the plate and let it chill in the refrigerator for at least 20 minutes to ensure a flaky crust.
Step 3
While the dough chills, preheat your oven to a toasty 425°F (220°C).
Step 4
Once chilled, line the pie crust with foil and fill it halfway with dried beans, rice, or baking weights.
Step 5
Bake in the preheated oven for 7 minutes.
Step 6
After this initial bake, carefully remove the foil and weights, then return the crust to the oven for an additional 5 minutes, or until it turns a lovely golden brown.
Step 7
As the crust bakes, heat a skillet over medium heat and cook the bacon until it’s beautifully browned and crispy, which should take about 8 to 10 minutes.
Step 8
Once done, transfer the bacon to paper towels to drain, leaving 1 to 2 teaspoons of the flavorful bacon fat in the skillet.
Step 9
Next, add the leeks, onion, salt, pepper, and a pinch of cayenne pepper to the skillet.
Step 10
Sauté until the vegetables are tender and golden, about 5 to 7 minutes, then set aside.
Step 11
When your pie crust is ready, lower the oven temperature to 325°F (165°C).
Step 12
In a large bowl, whisk together the eggs, egg yolks, heavy cream, and milk, then fold in the chopped thyme for a fragrant touch.
Step 13
Layer 2/3 of the leek mixture at the bottom of the baked crust, followed by 1/3 of the crispy bacon and 2/3 of the shredded Gruyère cheese.
Step 14
Carefully pour the egg mixture over this delicious filling, then top with the remaining leek mixture, bacon, and Gruyère.
Step 15
Bake in the oven until the quiche is golden, set, and no longer jiggly in the center, which should take about 40 to 45 minutes.
Step 16
Once baked, allow the quiche to cool slightly before slicing into it and serving.
Step 17
Enjoy the delightful blend of flavors in every bite!.
