Step 1
Wrap the whole cloves in cheesecloth or place them in a spice sack and set aside.
Step 2
Inspect 9 glass jars for any cracks and check the rings for rust, discarding any defective ones. Immerse the jars in simmering water until the jam is ready. Wash new lids and rings in warm, soapy water.
Step 3
In a large, deep saucepan, combine the pitted and quartered plums, lemon juice, water, and powdered fruit pectin over low heat. Stir occasionally and bring the mixture to a boil.
Step 4
Once boiling, add the sugar and the wrapped cloves. Cook while stirring continuously until the sugar dissolves and the mixture reaches 220°F (104°C), which should take about 3 to 5 minutes. Remove and discard the cloves after cooking.
Step 5
Carefully pour the hot jam into the sterilized jars, wiping any drips off the rims. Place the lids on the jars and let them cool on a damp towel. You will hear a popping sound as the jars self-seal, which should happen within about 2 hours.
