While the groats are soaking, grab a skillet and heat it over medium heat, letting it warm up nicely.

In a separate bowl, whisk together the spelt flour, shredded coconut, and baking powder until well combined.

In another bowl, mix together the soy milk, egg, oil, and honey if you’re using it, creating a smooth and creamy mixture.
