Step 1
Start by preheating your oven to 350Ā°F (175Ā°C). This will ensure it's nice and hot when your flan is ready to bake. Next, grab a heavy skillet and set it over medium-low heat. Add the sugar and stir it gently with a wooden spoon. Keep an eye on it as it melts and turns a beautiful golden color, which should take about 10 minutes. Be careful, as the caramel will be extremely hot! Once it's ready, carefully pour the caramel into a 9-inch round baking dish, swirling it around to coat the bottom and sides. Let it cool and harden while you prepare the flan mixture.
Step 2
In a blender, combine the eggs, cream cheese, and sweetened condensed milk. Blend on high until everything is well mixed and smooth. Transfer this mixture to a large bowl. Now, return to the blender and add the cream of coconut, coconut milk, evaporated milk, coconut-flavored rum, and vanilla extract. Blend again on high until fully combined. Pour this creamy mixture into the bowl with the cream cheese blend and whisk until everything is nicely incorporated.
Step 3
Pour the flan mixture into the caramel-coated baking dish. To create a water bath, line a roasting pan with a damp kitchen towel. Place the filled baking dish on top of the towel, then carefully pour boiling water into the roasting pan until it reaches halfway up the sides of the baking dish. This will help the flan cook evenly and prevent it from cracking.
