Step 1
Preheat your oven to 350°F (175°C). Prepare a 12x18-inch jelly roll pan by spraying it with cooking spray, lining it with parchment paper, and spraying it again.

In a small zip-top bag, place the coffee granules and crush them into a fine powder using a measuring cup. Set aside.

In a medium bowl, mix together the flour, sugar, baking powder, crushed coffee granules, and cinnamon.

In a separate small bowl, combine the egg yolks and soy milk. In a metal or glass bowl, beat the egg whites until soft peaks form. Add the egg yolk mixture to the dry ingredients and mix until crumbly, then gently fold in the beaten egg whites. Spread the batter evenly into the prepared pan.

Bake in the preheated oven for 9 to 11 minutes, or until the cake springs back lightly when pressed in the center.

While the cake is baking, sprinkle powdered sugar over a clean dish towel where the cake will be placed.

Once baked, remove the cake from the oven and immediately loosen the edges. Flip the cake onto the prepared dish towel, peel off the parchment paper, and roll the cake tightly from the short side, using the towel to assist. Allow it to cool for about 1 hour.

After cooling, unwrap the cake while keeping it on the towel. Spread the whipped topping evenly over the surface, then gently re-roll the cake, removing the towel as you go. Slice into 3/4 to 1-inch pieces using a serrated knife.
