Start by filling a large pot with about three inches of water.

Add a splash of apple cider vinegar and a generous pinch of kosher salt, then heat it over medium-high until it reaches a rolling boil.

While the water is warming up, grab four large collard green leaves and lay them flat on your cutting board.

Trim the stems so they’re even with the base of the leaves, then gently shave down the center stems to help the leaves lay flat without tearing.
