Step 1
Start by bringing a large pot of lightly salted water to a boil. Once boiling, add the tri-color rotini pasta and cook it until it's tender yet firm to the bite, which should take about 8 minutes. After cooking, drain the pasta and rinse it under cold water to stop the cooking process and cool it down.
Step 2
While the pasta is cooking, prepare your colorful pasta by taking 4 resealable plastic bags. In each bag, add 2 tablespoons of water. Then, add a different food coloring to each bag: red in the first, green in the second, blue in the third, and yellow in the fourth. This will give your pasta a fun and vibrant look!

Once the pasta is drained, divide it evenly among the four bags. Seal the bags and gently squeeze them to mix the pasta with the food coloring, ensuring each piece is coated. Let the pasta sit in the bags for about 10 minutes to allow the colors to saturate.

After the pasta has soaked up the colors, transfer it to a large mixing bowl. Now, let’s whip up the dressing! In a separate bowl, whisk together the sugar, cider vinegar, vegetable oil, dried parsley, salt, garlic powder, and black pepper until the sugar is fully dissolved. This dressing will add a delightful tang to your salad.
Step 5
Next, mix in the grated onion, diced green bell pepper, and grated carrots into the bowl with the colorful pasta. Drizzle the dressing over the pasta mixture and toss everything together until well coated. The colors and flavors will come together beautifully!
